I recently got married myself and to be honest didn’t have a big budget to blow on it. My fiance (now my husband, still funny for me to call him that) and I wanted to have a fun casual setting and healthy food for our guests. Finding the venue was easy for us because we went to our third date location a winery, so it was given that we will get married there.
Getting dress; well, I am a girl so my friends helped a lot lol. But we spent hours, which turned into days trying to decide on the caterer. I forgot to mention that my husband has on a gluten free diet, which made it more challenging. We wanted something we love but healthy versions, all worked out before our big day. We were at our friend’s Birthday party and they had chef Anthony catering it from Wheat and Fire Pizza Catering. Of course I tried the wood fired pizza and was amazed by all the flavors and complexity of this artisan wood oven pizza. We started talking to Chef Anthony and he turned out to be a very knowledgeable person. He has been baking for many years and developed his own digestive issues, apparently eating a lot of croissants is bad for you… He has a great sense of humor too as you can see. We learned from him that flour bought from the bag at the store has no nutritional value anymore, they take everything good out to make it shelf stable and that instant yeast is and other processed yeast is what is hurting our digestion.
After many questions and a long conversation about gluten, he talked my husband to try his gourmet pizza and I am so happy that he did! Of course, my husband was scared that it will make him sick but it DIDN’T! Chef Anthony was right about everything! So let me tell you what made a huge difference, a simple fact that chef grinds his own flour, uses natural yeast and only uses organic and natural ingredients. Because of that my husband is able to eat pizza again and cookies, Chef made amazing cookies. We hired Wheat and Fire Pizza Catering to cater our pizza wedding and it was a smashing success. My husband had a lot of pizza that day, which made him very happy.
